Chicken Soup & Good News For the Soul
Delicious Greek lemon soup with chicken meatballs & orzo plus two good news round-ups
My younger son came home sick from school Friday with the dreaded flu. Despite getting a flu shot this fall, I succumbed on Saturday evening. High fever, chills, terrible body aches (including my scalp and feet?!), cough, headache. NOT FUN. Fortunately, the little guy seems to be on the mend after a rough couple of days. So far, we have watched Ferris Bueller’s Day Off, Two Weeks Notice, The Great British Baking Show New Years Epiode, Ironman, and the first episode of Miss Scarlet and the Duke.
I know I’m far from the only one who’s sick this week, so I am sharing this lovely recipe for Greek lemon soup with chicken meatballs and orzo with y’all. It’s fresh and hearty and nourishing.
You start with a good chicken stock (btw: if you ever roast a chicken, it’s the perfect time to make stock with the carcass—I freeze it in mason jars to have it on hand.) Then you flavor the stock with lemon and thicken it with egg. The meatballs are spiked with herbs—mint, parsley, and dill as well as finely minced onion. And you add lots of orzo ‘cause this is comfort food. The acidity of the lemon brightens the hearty broth and makes all the flavors shine. Mwah! So good!

Nichols was appointed to the bench by Trump in 2019. He’s served on a number of high-profile, Trump-adjacent cases, sometimes ruling in Trump’s favor, sometimes sending Steve Bannon to prison.”
