Rhubarb Johnnycake, Call Congress NOW, Watch These To LAUGH + Good News | 5/26/25
If you don't laugh, you'll cry... So let's LAUGH!
I hope you had a great holiday weekend. I spent some of it with old friends who reminded of the healing power of laughter. A good laugh — I’m not talking chuckling or giggling, I’m talking laughing so hard you can’t speak, your face HURTS, and you’re probably leaking tears and/or urine — can reduce your cortisol levels and release endorphins to help you recover from stress. Scroll down for some movie, TV series, and Saturday Night Live skits to help you laugh during this dumpster fire of a presidency.🎥😹Also, those of you who are in perimenopause must watch this short video my mom-in-law sent me and read the comments adding suggestions for the We Do Not Care Club (WDNC).
We need all the laughs we can get right now because the hits keep on coming. Last week, the House passed a barbaric budget bill that would cause deep harm to Americans while enriching the rich and increasing our trade deficit. Scroll down for an important action you MUST TAKE TODAY to help stop this budget from passing.
But enough about Trump and the joys of perimenopause, let’s talk about RHUBARB. It’s a funny vegetable that can quickly take up more than its fair share of space in the garden and enjoys a brief glory in the spring. I love the unusual colors of the rhubarb plant’s long stalks and leaves—it’s a delightful ombré slide up the stalk from red to pink to chartreuse to dark green leaves with thick magenta veins. It’s not something you’d want to eat raw but, when cooked, rhubarb lends a delicious tartness to desserts, jams, and chutneys (TIP: chop and freeze it now to easily add to canned goods in a few months.) Scroll down for a simple, tasty gluten-free seasonal dessert starring this seasonal stalk.
Keep reading ‘cause I’ve got some good news for you ⬇️😊 amidst the ocean of deep doodoo flowing out of the White House on a daily basis 💩💩💩.
I hope you’re feeling rested and ready to resist because we all need to stand up. And don’t forget to laugh until you cry as often as you can while you’re doing it. 🤣
Please share this newsletter with your friends, family and neighbors and urge them to join you in resisting.

🍰EAT: Rhubarb Johnnycake, A Seasonal Gluten-Free Treat
Made with cornmeal, this johnnycake is easy to make for a quick late spring dessert. Sour cream gives it a rich moist crumb and the ginger gives the tart (but mellowed) rhubarb a little extra zing. The colors are cheerful, too.

📞CALL: Congress Must REJECT Trump’s “Big Beautiful” Bill 🏛️
Last week, the House passed an ugly harmful tax and immigration package that would hurt millions of Americans while enriching the rich and increasing our deficit. The good news is that we can stop it from passing through the Senate and then defeat it when it goes back to the House if enough of us rise up against it right now. So please join me in calling your members of Congress today (like right now!) to urge them to reject this awful bill.
GOOD NEWS: Yes, There Is Some :)
Although the budget bill the House passed is truly awful, at least it no longer includes two dangerous provisions — the “nonprofit killer provision” and a provision to sell 500,000 acres of public lands.
Last Thursday, a federal judge blocked Trump’s executive order to dismantle the Department of Education and also ordered the agency to reinstate the employees who were fired in mass layoffs. This is HUGE. Take that, Project 2025.
Deforestation actually decreased in Brazil in 2024 for the second year in a row. Huzzah!
A federal judge has temporarily blocked the Trump administration's move to revoke Harvard University's ability to enroll international students.
A child diagnosed with a rare genetic disorder appears to have been successfully treated with a gene editing therapy made possible by CRISPR, paving the way to cure rare genetic diseases by rewriting faulty DNA soon after children carrying it are born. Wow, right?!
China’s greenhouse gas emissions are declining, despite the country’s surging demand for energy. How? Renewable energy!
Farmers sued the Trump administration over deleted climate change information on the Agriculture Department website that helped them do business. A judge has ruled the Ag Dept must restore it.
